Summary

THE PROCESS EQUIPMENT FOR FRUIT AND VEGETABLES IS MORE COMPLICATED THAN IN CONVENTIONAL COLD STORES AND MUST FULFILL SIX BASIC PROCESS FUNCTIONS WHICH ARE BRIEFLY CHARACTERIZED. EXISTING PROBLEMS OF FRUIT AND VEGETABLES STORE UTILIZATION DURING SUMMER MONTHS ARE SOLVED BY POLYVALENCE AND FREEZING FACILITIES IN A PART OF THEIR VOLUME. FOR FURTHER PERFECTIONING OF STRUCTURAL PART, MACHINERY EQUIPMENT AND OPERATION OF THESE STORES AN OPERATIONAL AND MONITORING INVESTIGATION HAS BEEN PERFORMED IN TWO NEW STORES.
