Nonsteady state heat conduction analysis of cabbage under individual quick cooling.
Author(s) : SHIINA T., HAGIWARA S.
Summary
Heat conduction measurements were performed on cabbage; it was demonstrated that heat conduction decreased with increasing cabbage mass. Mathematical equations were established to describe this trend; these equations may provide a useful tool enabling calculation of the chilling time required for cabbage.
