Summary
The nutritional assets of the tomato have been established by epidemiological studies showing a decrease in the incidence of certain forms of cancer and of cardiovascular diseases. Numerous constituents are involved. The study focused on three of them: vitamin C and the two pigments carotene and lycopene, to characterize batches of tomatoes grown and marketed under current conditions. The varietal type has been shown to be a determinant. Recommendations for obtaining a good overall quality, such as harvest at maturity and short storage, have a positive effect on the vitamin C content. Interpreting the variabilities of pigment contents requires the acquisition of references on the influence of climatic growing conditions.
