Summary

The paper describes the operating principles for various continuous or in-line freezing systems for the freezing of naked as well as packaged food products and summarises the significant design criteria for the finned air coolers applied in these systems. Three different refrigerant feed methods normally used are described and the characteristics of each method in relation to refrigerant, heat transfer, pressure drop, coil utilisation, reliability, costs and susceptibility to moisture are explained.
