Summary

Drying is the oldest form of food preservation. The choice of a drying method depends mainly on the demand for quality and the consideration for economics. The problem is to optimize processing variables for maximum product quality. Several examples will illustrate this challenge: designing a continuous solar drying process; producing quality vegetables by vacuum drying; and converting a fruit juice to a dry powder with a modified freeze-drying method.
