Summary

Plums were cold-stored at either -0.5 deg C for 28 days, or at -0.5 deg for 10 days followed by 7.2 deg for 18 days. They were then ripened at 10 deg C for 8 days. At the time of harvest the glucose-fructose-sucrose ratio was 18-27-1. Colour and firmness indicated more advanced ripening of fruits stored at dual temperature than of those stored at single temperature. In dual-temperature-stored fruits, glucose, fructose and sucrose concentrations were significantly lower during the greater part of cold storage and ripening than in single temperature-stored fruits, while sucrose concentrations were higher.
