The effect of ripeness degree and storage conditions upon Melrose and Granny Smith apples.

Summary

The changes in the dry substance, the fructose, the acids and the fruit tissue hardness were studied. It was found that, irrespective of the ripeness degree and the storage conditions, there is a tendency towards a decrease in the dry substances and the acids. The fruit tissue hardness also decreases. At the same time, the fructose and the acid coefficients rise. The least changes were observed with fruits stored under polyethylene cover in controlled atmosphere.
