Summary
The manufacture of ready-to-use salads is entirely dependant on the use of refrigeration. Contrary to accepted ideas, these very short shelf-life products (their keeping time limit varies from 5 to 7 days) do not contain gases, additives, or preservatives. Also, they are never stored in a vacuum.
