Summary
The influence of the freezing temperature in the air and vapour drop nitrogen medium on hydrolysis of pectin substances, as localized in different organellas of a plant tissue was established. Taking honey-suckle berries as an example, a close reverse correlation between the loss of free and weakly-bound moisture describing the reversibility of a freezing process, and a mass fraction of pectin substances was found.
