Summary
In this article the theoretical substantiation and the comparative analysis kinetics of the heat-conducting path in a tunnel and two-modular "quick freeze" devices is described. The product used in the refrigerating processing was an unpacked combined "a dough + a stuffing" (pies with a meat stuffing). Also prospects for use of two-modular "quick freeze" devices are analysed with a view to designing lines for a line production.
