Summary

TESTS ARE REPORTED ON TWO LOTS OF 200 POULTRY CARCASSES FROM THE SAMPLES TAKEN DURING FIVE DIFFERENT DAYS. THE CARCASSES OF THE FIRST LOT WERE COOLED BY PASSING THROUGH A TUNNEL, PROVIDING SURFACE COOLING IN A LIQUID CO2 ATMOSPHERE AND COOLING OF THE INTERNAL CAVITY BY INJECTION OF CO2 INSIDE CARCASSES (1). THE CARCASSES OF THE SECOND LOT WERE COOLED BY AIR UNDER CONVENTIONAL CONDITIONS. 40 CARCASSES CORRESPONDING TO EACH COOLING SYSTEM WERE DISTRIBUTED INTO TWO GROUPS OF 20 EACH ; THE FIRST WAS SUBJECTED TO A BACTERIOLOGICAL TEST ONE HOUR AFTER ITS REMOVAL OF THE COOLING PLANT, THE SECOND WAS TESTED 24 HRS LATER. ALL CARCASSES WERE PACKAGED IN A PLASTIC FILM AND STORED AT 275 K (2 DEG C). TEN CARCASSES OF EACH GROUP WERE EXAMINED AFTER 6 DAY STORAGE, THE OTHER TEN AFTER 9 DAYS. THE RESULTS OF BACTERIOLOGICAL EXAMINATIONS, MADE ON SAMPLES OF THE NECK SKIN (5 G) (COUNT OF MESOPHILIC AND PSYCHROTROPHIC FLORA AND OF COLIFORMS) PARES THE TEMPERATURE OF POULTRY PRIOR TO AND AFTER PASSAGE THROUGH EACH OF THE TWO COOLING SYSTEMS ; A THIRD TABLE COMPARES MASS LOSS DURING COOLING. NO DIFFERENCE WAS OBSERVED BETWEEN THE COUNTS PRIOR TO AND AFTER COOLING (ONE HOUR OR 24 HRS LATER), EXCEPT FOR THE PSYCHROTROPHIC FLORA OF CARCASSES EXAMINED AFTER 6 AND 9 DAY STORAGE, THOSE COOLED BY CO2 BEING MORE HUMID THAN THOSE COOLED IN AIR.
