Summary

Emphasis is on current post-harvest technology procedures for fresh fruits, vegetables, and ornamentals in California. However, all the principles discussed are applicable to post-harvest handling of fresh horticultural crops worldwide. Thirty-three chapters are included, dealing notably with the cooling methods of horticultural commodities, storage systems, modified atmospheres during transport and storage, methods of gas mixing, sampling and analysis, enery use in post-harvest technology procedures, quality and safety factors, post-harvest handling systems, etc. In the chapter on cooling, several methods are described, such as room cooling, forced-air cooling, forced-air evaporative cooling, hydrocooling, package-icing and vacuum-cooling, etc.
