Summary

Two-years trials on quality and storage of prickly pears are reported. The effect of maturity stage and controlled atmosphere conditions on keeping quality has been studied. Keeping quality has been evaluated with chemical and physical methods and with panel test; cv Rossa had a higher edible portion, while cv Gialla kept better. Prickly pears kept in good conditions for 30 days at 5 deg C except for unripe fruits that showed superficial pitting after storage. Controlled atmosphere storage with 2% O2 and 2% CO2 at 5 deg C reduced pitting and prolonged storage life to 45 days.
