Summary

Postharvest softening and physiological changes of kiwifruit (Actinidia chinensis, A. deliciosa) cv. Hayward under air and controlled atmosphere (0 °C) storage was investigated for 16 weeks and then fruits were stored on the shelf at ambient temperature for 7 days. The following parameters were investigated: flesh firmness, titratable acidity, soluble solid content, respiration rate, ethylene production and enzyme activity.
