Summary

THE STUDY DESCRIBES TWO TYPES OF PRECOOLING IN A TEST TUNNEL. THE ORIGINAL TUNNEL WAS BUILT FOR FIVE PALLETS PER ROW AND IN THE IMPROVED TYPE, THE TUNNEL WAS EXTENDED FOR EIGHT PALLETS PER ROW WITH A WATER SPRAYING UNIT. THE RESULTS CONFIRMED THE ADVANTAGE OF THE RAPIDITY OF PRECOOLING WITH FORCED AIR, THE TIME REQUIRED BEING ONLY 1/4 TO 1/10 OF THE COOLING TIME IN COLD STORES. BY CONTROLLING AIR FLOW RATE, PRECOOLING CAN BE ACCELERATED. THE MAXIMUM PRECOOLING RATE IS REACHED AFTER 16 TO 20 HRS. THE QUANTITATIVE LOSSES RECORDED WERE LOWER IN THE IMPROVED TYPE WITH WATER SPRAY. THE DECREASE IN LOSSES IS ABOUT 1 TO 2%.
