A MATHEMATICAL MODEL TO PREDICT MOISTURE LOSS DUE TO TRANSPIRATION IN REFRIGERATED STORAGE OF FRUIT AND VEGETABLES IS DESCRIBED. THE MODEL IS APPLICABLE TO COMMODITIES OF APPROXIMATELY SPHERICAL SHAPE, POSSESSING UNIFORM AND LARGELY IMPERVIOUS SKINS. THUS THE MODEL IS APPLICABLE TO A WIDE VARIETY OF FRUITS, BUT EXPERIMENTATION HAS BEEN LIMITED TO TOMATOES.
