Summary

Predictive microbiology is based upon the premise that the responses of populations of microorganisms to environmental factors are reproducible. The result is a normal canonical form for quadratic function. The model was tested in two different types of salami at the Food Safety Department of IZSLER (Istituto Zooprolafilattico Sperimentale della Lombardia e dell'Emilia Romagna - Italy).
