Summary

The objective of the work is to extend the use of a simple prediction method, developed for the freezing of uni-dimensional foods, to the prediction of the freezing times of regular multi-dimensional foods, using different formulae for the evaluation of the shape factors. Predicted values are compared with experimental data for different foodstuffs.
