Summary
A continuous process was developed for improving the texture of diced tomatoes by emerging them in saline solutions containing tomato serum, sodium and calcium chloride. Combined with aseptic packaging, this process can increase product consistency by about 200% over the conventional process. The other analytical parameters changed little.
