IN VIEW OF THE PREVAILING DIFFERENCES BETWEEN COUNTRIES AS REGARDS STANDARDS FOR THE FRESHNESS AND QUALITY OF FRUIT AND VEGETABLES, THE AUTHOR HAS CARRIED OUT AN INVESTIGATION INTO THE PRECOOLING METHODS CURRENTLY BEING EMPLOYED IN ORDER TO FIND OUT IF THERE ARE RADICAL DIFFERENCES IN THE COOLING PROCESS ITSELF. A PARTICULAR COMPARISON IS MADE BETWEEN PROCESSES USED BY JAPAN AND THE USA.
