PRESERVATION OF THE BIOLOGICAL ACTIVITY OF LYOPHILIZED SARDINE MYOFIBRILS.

Summary

DURING FREEZE-DRYING AND SUBSEQUENT STORAGE AT 20% RH AND 20 DEG C, ACCUMULATION OF FREE FATTY ACIDS WAS NOTICED IN THE SAMPLES. IT WAS ALSO RECOGNIZED THAT LIPID OXIDATION PARTICIPATED IN PROTEIN DENATURATION AS MEASURED BY ATPASE ACTIVITY. LIPID OXIDATION AND PROTEIN DENATURATION WERE RESTRICTED BY VACUUM TREATMENT DURING STORAGE, AND THE LYOPHILIZED SARDINE MYOFIBRILS STILL HAD GELFORMING ABILITY AFTER FOUR MONTHS STORAGE UNDER VACUUM. STORAGE IN TWO DIFFERENT INERT GASES AND ADDITION OF AN ANTIOXIDANT MARKEDLY REDUCED LIPID OXIDATION AND INHIBITED PROTEINS DENATURATION.
