Summary

API-system characterisation of the measure of deshydrogenaesic alcohol activity, of the study of protein profiles and of the fermentation kinetics of strains AXAZ-1, AXAZ-2, AXAZ-3 and Visanto. After adaptation, these yeasts are capable of fermenting must between -2 and -5 deg C. At -2 deg C, the strains Visanto-1 and AXAZ-1 produce wine at 9.9 and 10% alcohol.
