Summary
Immobilization of Saccharomyces cerevisiae AWAZ-1 was studied by electron microscopy. The stability of this biocatalyst during repeated batch fermentation at different temperatures was investigated. The grape wort fermentation capacity of immobilized yeasts was assessed.
