7 AMINES CURRENTLY FOUND IN GROUND BEEF WERE EVALUATED AS INDICATORS OF TOTAL BACTERIAL, PSYCHROTROPHIC AND COLIFORM COUNTS IN RAW GROUND BEEF STORED FOR12 DAYS AT 277, 280 AND 283 K (4, 7 AND 10 DEG C). AT 2-DAY INTERVALS, AMINES WERE ANALYZED BY EXTRACTION, SEPARATION AND DETECTION. CORRELATION AND REGRESSION ANALYSIS WERE USED TO DETERMINE THE RELATION-SHIP OF AMINE CONCENTRATION TO BACTERIAL COUNT.
