Summary

EXPERIMENTAL STUDIES WERE CARRIED OUT ON FAT, MEDIUM FAT AND FATLESS BLOCKS OF CHEESE WEIGHING 6.2 KG, WRAPPED IN POLYETHYLENE AT TEMPERATURES BETWEEN 255 AND 248K (-18 AND -25 DEG C). THE ACIDITY AND OTHER PROPERTIES OF THESE CHEESES W-ERE MEASURED AFTER AN 8 MONTHS PERIOD OF REFRIGERATION STORAGE. THE AA. CONCLUDE THAT THE QUALITY OF CHEESE DID NOT DETERIORATE AFTER 8 MONTHS STORAGE. E.K.
