Summary
The quality changes of dry hull and hard shell fruits of two varieties of pistachio nut that are of economic importance for Turkey were determined during the storage period under ambient conditions. It was observed that some undesirable quality changes occurred during the storage period as a result of fat composition of samples stored under ambient conditions.
