THE AUTHORS ASSESS RECENT TRENDS IN FISH CATCHES, CONSUMPTION OF TUNA AND THE TRANSITION OF EATING MODES OF TUNA AS CORRELATED TO THE DEVELOPMENT OF FREEZING TECHNIQUES, AND DISCUSS DETAILS OF FACTORS CONTRIBUTING TO THE QUALITY DETERIORATION OF TUNA MEAT ASSOCIATED WITH FREEZING, STORAGE AND THAWING.
