Quality of fresh ginseng stored at modified atmosphere conditions.

Summary

The study was performed as a trial for shelf-life extension of fresh Korean ginseng. Respiratory characteristics and thermal properties are fundamental data of fresh ginseng. Quality changes of fresh ginseng stored with modified atmosphere packaging treatments was measured. The ginseng harvested in November maintained higher quality than ginseng harvested in October or December. Weight loss and decay rate of the ginseng packaged in 70 mm polyethylene films was 16.5 and 7.2% after storage for 5 months at 2 °C.
