A study of quality parameters in green pepper packaged with polymeric films.

Summary

Low temperature alone may be insufficient to retard the ripening of fresh products or prevent deteriorative changes. In the last 10 years, modified-atmosphere packaging of fresh products has become increasingly more important. Because of these advantages, in this research, different thickness of low-density polyethylene (LDPE) films on the shelf life and quality parameters of green pepper were investigated. 20, 30, 50, 70, and 100 microns LDPE films were used as packaging materials. Some of the samples were stored unpacked as control. The storage temperature and relative humidity were selected as 8 deg C and 90 more or less 2% relative humidity respectively. To observe the quality changes of the samples pH, total acidity, texture, dry matter, colour, weight loss and sensory evaluation analyses were carried out at certain storage periods. Also gas composition changes in the package atmosphere were determined. The shelf life of unpacked green pepper stored at 8 deg C, 90 plus or less 2% relative humidity, was found to be 10 days. With 70 micron LDPE film, the overall quality of green pepper is preserved during 29 days of storage at 8 deg C and 90 more or less 2% relative humidity.
