Effect of modified atmosphere packaging conditions on storage quality of zucchini.

Summary

Plastic films of different permeabilities were used for packaging zucchini, in order to find suitable modified atmosphere conditions. A variety of atmospheres were established inside the packages, and their effect on the keeping quality of zucchini was assessed. Packages of low density polyethylene produced an atmosphere of 2-7% O2 and 5-8% CO2, which was beneficial for ascorbic retention and visual quality. It could also help to reduce moisture loss. Individual wrapping with polyvinyl chloride gave the similar quality retention with some weight loss.
