FOR THE STUDY, TWO PREPARED MEAT DISHES PACKED IN ALUMINIUM FOIL WERE SELECTED. THE VALUES OBTAINED WHEN SIMULATING AIR DISTRIBUTION GIVE THE BASIS FOR THE CALCULATION OF SYMMETRICAL AIR FLOW, CAPABLE OF PROVIDING A UNIFORM TEMPERATURE FIELD IN THE TUNNEL AND THIS ENABLE ONE TO USE THE MAXIMUM REFRIGERATING POTENTIAL OF THE FLOW OF AIR.R.
