THE APPLICATION OF REFRIGERATION AND CONTROLLED ATMOSPHERE FOR THE PRESERVATION OF FRESH FRUITS AND VEGETABLES PROGRESSED RECENTLY. IMPROVEMENTS IN REDUCING PHYSIOLOGICAL DISORDERS (SENESCENCE, CHILLING INJURY OR OTHER DISEASES) WILL RESULT BOTH FROM ADVANCES IN BIOCHEMICAL OR ENVIRONMENTAL CONTROL. THESE TWO ASPECTS ARE DOCUMENTED THROUGH SOME EXAMPLES INVOLVING PRESTORAGE TREATMENTS (CALCIUM AND GROWTH REGULATOR SPRAYS OR DIPS, HEATING) AND STORAGE CONDITIONS (CONTROLLED ATMOSPHERE, VERY HIGH HUMIDITY, HYPOBARIC SYSTEM AND TEMPERATURE OR ATMOSPHERE MODULATION).
