Author(s) : TONINI G., BERTOLINI P.

Summary

TESTS WERE CARRIED OUT ON STARK REDGOLD AND FLAVORTOP VARIETIES AT 273 K, WITH 2% O2 AND 2.5, 5, 10 AND 15% CO2. AFTER 40 DAYS THE BEST RESULTS WERE OBTAINED WITH 10% CO2. THIS CONCENTRATION REDUCES THE OCCURRENCE OF INTERNAL BROWNING, THE PERCENTAGE OF ROT, OF OVERRIPE FRUIT, FLESH SOFTENING, FLAVOUR AND AROMA LOSS, ETC.
