Summary

THE HETEROGENEOUS FRUIT POSTHARVEST BEHAVIOUR IS PARTLY EXPLAINED BY AN INITIAL INABILITY TO RIPE THAT CAN BE CANCELLED BY A SHORT STORAGE AT COLD TEMPERATURES, OR BY A VARIABLE TIME STORAGE AT MEAN TEMPERATURES. THE BEST TREATMENT FOR STORAGE OF 6 MONTHS IS A CONTROLLED ATMOSPHERE AT 273 K (0 DEG C), WITH A MIXTURE OF 5% CO2, 5% O2. THE SALE OF DEGREENED FRUIT, EARLY IN THE SEASON (MID NOVEMBER) REQUIRES TEMPERATURES OF ONLY 279, 285 K (6, 12 DEG C) AND THE SAME MIXTURE.
