Summary

The book deals with the utilization of refrigeration in wine cellars. It is divided into three parts. In the first one, the basic principles of mechanical-compression cold-production systems are reviewed; the electricity consumption of refrigerating plants in cellars is analyzed. For the optimal design of these plants, several points are taken into account: refrigeration requirements, evaporation and condensation temperatures of the refrigerant, and compressor, evaporator and condenser sizing. In the second part, each of the main components of the refrigerating plant is studied: compressors, evaporators, condensers, etc. In the third part, the special cooling requirements of a cellar are described: precooling of must for fermentation, stabilization of must and wines, selective cryoextraction of must, low-temperature maceration before fermentation, obtention of sweet wines, preparation of sparkling wines by adding CO2.
