THE BEST KNOWN APPLICATION OF REFRIGERATION IS, BY FAR, THE PRESERVATION OF PERISHABLE FOODSTUFFS WHICH DETERIORATE RAPIDLY AT AMBIENT TEMPERATURE SUCH THAT IT BECOMES DIFFICULT TO MARKET THESE PRODUCTS. IN ADDITION, PRODUCT LOSSES BEING HIGH, THE SELLING PRICE OF FOODSTUFFS BECOMES ABNORMALLY INCREASED. IN WARM COUNTRIES THESE LOSSES CAN, IN FACT, BE ALMOST 50% AND EVEN LARGELY EXCEED THIS FIGURE IN THE CASE OF THE MOST FRAGILE SUBSTANCES.
