Summary
Post-harvest refrigeration, transport and retail display are all factors or stages that influence the definition and integrity of the supply chain for fresh vegetables. Despite the constant development of new resources, some weaknesses still remain. The rapid transfer time and high product turnover in stores result in limited use of equipment that could offer many advantages in a number of cases. Moreover, consumers are tending to store produce for longer periods, calling for certain precautionary measures. This article reviews various refrigeration processes for preserving fresh vegetables, and presents some thoughts on the appropriate equipment, especially for the downstream part of the chain.
