THE ARTICLE CONCERNS THE GROWTH IN THE USA OF SMALL SPECIALISED MEAT PROCESSING PLANTS, OFTEN CONCERNED WITH THE YIELD OF LOCAL HUNTING OF GAME BIRDS, BEAR AND DEER. MANY OF THESE PLANTS WERE ADAPTED FROM OLD LOCKER PLANTS AND SURVIVE BY OFFERING A CUSTOMISED SERVICE AND SPECIALITIES SUCH AS PARTY TRAYS AND GIFT PACKS. SOME STILL OPERATE ON AMMONIA. SUGGESTIONS ARE MADE FOR THE ASSISTANCE THAT CONTRACTORS CAN GIVE TO MODERNISE AND SERVICE THESE FACILITIES. D.W.H.
