Summary

THE OBJECT OF THE TEST WAS TO ESTABLISH THE DEPENDENCE BETWEEN THE DEGREE OF MUSCLE CONTRACTION OCCURRING DURING SLAUGHTER AND AFTER COOLING UPON MEAT TENDERNESS. THREE CHAMBER TESTS WERE CARRIED OUT USING DIFFERENT COOLING TEMPERATURES AND AIR VELOCITIES.
