Summary

Three strains of L. monocytogenes were stored at 4 deg C for 4 weeks in a phosphate buffer at pH 5.5 or 7.0, in either the presence or absence of potassium sorbate (0.2%) or sodium acetate (0.3%). The number of viable cells did not vary during storage. Storage at 4 deg C reduced the pathogenic power of strains, but this effect depends on the strain, the pH and the substrate. There exists a correlation between the decline in pathogenic power after storage at 4 deg C and the extension of the latency phase at 37 deg C.
