Summary

The French sturgeon-production sector encountered a major recession in the mid-1990s. Following a difficult period amounting to survival only, mainly because sturgeon fish consumption was stagnating, the market took off again thanks to caviar that has now gained recognition and is comparable with that produced in Central Asia.
