Summary

A SOPHISTICATED METHOD FOR THAWING STURGEON IN STILL WATER AT 273.5-274 K (0.5-1 DEG C) THANKS TO THE LATENT HEAT OF ICE FORMATION IS DESCRIBED. THE RESULTS OF TESTS CARRIED OUT IN LABORATORIES AND IN INDUSTRIAL PLANT SHOWED THAT THIS THAWING PROCESS IS AS GOOD FOR FISH CHARACTERISTICS AS THAWING IN RUNNING WATER. THE DATA SHOW THE ADVANTAGES OF THIS PROCESS. R.R.
