Research on particular biochemical modifications in apples stored in cold, modified atmospheres.

Recherches concernant certaines modifications biochimiques dans les pommes conservées dans des conditions de froid et d'atmosphère contrôlée.

Summary

The report describes the lowered intensity of respiration and the losses caused by this process in Jonathan, Golden Delicious and Starkimson apples stored in cold, controlled atmospheres. The apples were stored at 0, 4 and 6 deg C in metal containers having compositions of 1 to 5% CO2 and 0.5 to 1% O2. For 7 months of low-O2 storage, the biosynthesis process of ethylene was inhibited, and the permability of cellular membranes was reduced. Other biochemical modifications were studied, as well.
