Practical determination of the respiration rate in controlled atmosphere stores.

Summary

An original method for obtaining the respiration rate of fresh fruit and vegetables in controlled atmosphere storage is presented. This uses the ideal gas law, mass balances on the gases involved and a tightness coefficient for the permeability of the store. The proposed mathematical model gives the respiration curve in real time if CO2 and O2 concentrations are monitored at different locations in the store.
