Influence of storage temperature on technological properties of potatoes.

Summary

The tubers of 36 varieties of potatoes grown in the Czech Republic were stored for 2 weeks at 15 deg C and 95% relative humidity and then for six months at 1-4 deg C and 8-12 deg C. Several chemical and physical parameters were evaluated before storage, twice during storage and during processing. The data obtained were processed using various statistical methods. The shelf life and properties of "Czech" potato varieties are compared with published data of other potato cultivars.
