Summary

THE LIMITS WERE STUDIED OF THE APPLICABILITY OF FREEZE-CONCENT RATION VS VACUUM DISTILLATION ON GOLDEN DELICIOUS APPLE AROMA CONCENTRATION. IN THE FIRST TEST, TWO METHODS WERE COMPARED USING A MODEL SOLUTION HAVING AN INITIAL CONCENTRATION 1 PER THOUSAND OF TOTAL AROMA COMPOUNDS. BOTH METHODS PRODUCED A SIMILAR RECOVERY OF 93%. IN THE SECOND TEST, THE TWO METHODS WERE COMPARED USING A MODEL SOLUTION 2 PER THOUSAND OF INITIAL CONCENTRATION. THE TOTAL AROMA RECOVERY BY FREEZE-CONCENTRATION WAS 75 VS 90% OF VACUUM DISTILLATION DUE TO THE FACT THAT THE MODEL SOLUTION WAS TOO HIGHLY CONCENTRATED FOR THE SATISFACTORY RECOVERY OF AROMA BY FREEZE-CONCENTRATION.
