FROZEN PRE-FRIED VEGETABLES IS AN ALTERNATIVE FOR PRODUCTS THAT NORMALLY ARE NOT IN THE FROZEN MARKET, AS EGGPLANTS. THE COVER LAYER IMPROVES THE FIRMNESS, GIVING GOOD APPEARANCE AND CRISPNESS TO THE PRODUCT. THE QUALITY TESTS PERFORMED ON THIS FROZEN VEGETABLE AFTER 9 MONTHS OF STORAGE INDICATED A GOOD FLAVOUR, COLOR AND APPEARANCE, BUT A CLEAR LOSS OF FIRMNESS WAS OBSERVED ON EGGPLANT SLIDES INSIDE THE COVER, AFTER 4-5 MONTHS OF FROZEN STORAGE.
