THE THERMOPHYSICAL PROPERTIES OF FOODSTUFFS ARE REQUIRED FOR PROCESS CALCULATION AND OPTIMISATION. FROM AVAILABLE DATA, CALCULATION METHODS FOR THERMOPHYSICAL PROPERTIES WERE DEVELOPED. EXISTING DATA SHOWS THE LIMITS, BUT ALSO THE GENERAL POTENTIALITIES OF SUCH A METHOD.
