Summary
Ripe fruits of the apple cultivar Elstar were placed in different types of plastic foil bags containing modified atmospheres, and were stored at 1 deg C for up to 3 months followed by holding at 18 deg C. The atmospheres comprised O2 at 21 or 4% and CO2 at 0-10%, in various combinations. Atmospheres of 4% O2 and 7 or 10% CO2 resulted in the hardest apples after 12 weeks. No adverse effects on fruit flavour were detected with any of the treatments, nor was there any CO2 damage. During the display period, however, fruit condition rapidly deteriorated.
