THE AUTHOR COMMENTS ON THE OUTSTANDING DEVELOPMENT OF ATLANTIC SALMON FARMING IN NORWAY (4,000 TONNES PER YEAR IN 1980, 140,000 TONNES PER YEAR IN 1990), IN SCOTLAND (30,000 TONNES PER YEAR) AND IN IRELAND (8,000 TONNES PER YEAR). THE REASONS FOR THIS SUCCESS ARE ANALYZED (BREEDING, HANDLING, CONDITIONING, TRANSPORT, DISTRIBUTION IN THE CHILLED STAT THE METHODS FOR PROCESSING SALMON BEFORE SMOKING ARE THEN DESCRIBED (FRANCE PRODUCES 10,500 TONNES OF SMOKED SALMON PER YEAR) ; FREEZING (FREEZING OF RAW MATERIAL OR FREEZING OF THE FINAL PRODUCT) IS EMPHASISED.
